Smokey Oven Baked Potatoes
Ingredients
- 1 large or 2 medium white potatoes
- smoked paprika
- about 1 tablespoon nutritional yeast
- sea salt
- olive oil (optional)
Preparation
Preheat oven to 200C/180C fan/400F/gas mark
Line a baking tray with non-stick baking parchment
Wash and scrub the potatoes, then slice them into chunky bite-sized pieces or cut into wedges
Add the potatoes to a mixing bowl, drizzle with a little olive oil if desired or skip the oil, then sprinkle with smoked paprika, about 1 tablespoon nutritional yeast and season with sea salt
Stir the potatoes until they are fully coated in the seasonings
Transfer the seasoned potatoes to the lined baking tray and bake for 30 minutes, turning over halfway, until golden and crispy on the outside
Tips
Serve with bean salad and hummus
They are delicious dunked in tomato ketchup, hummus or guacamole
