Smokey Baked Potato and Bean Salad Bowl

Ingredients

  • 1 large or 2 medium white potatoes
  • smoked paprika
  • nutritional yeast
  • sea salt
  • olive oil
  • mixed beans
  • romaine lettuce
  • tomatoes
  • avocado
  • sweetcorn
  • hummus

Preparation

  1. Preheat oven to 200C/180C fan/400F/gas 6 and line a baking tray with non-stick baking parchment

  2. Wash and scrub the potatoes, then slice them into chunky bite-sized pieces

  3. Add the potatoes to a mixing bowl, drizzle with a little olive oil, sprinkle with smoked paprika, about 1 tablespoon nutritional yeast, and season with sea salt

  4. Stir the potatoes until fully coated in the seasonings

  5. Pour the potatoes onto the lined baking tray and bake in the oven for 30 minutes, turning over halfway, until golden and crispy on the outside

  6. Prepare the mixed bean salad by combining mixed beans, romaine lettuce, chopped tomatoes, sliced avocado, and sweetcorn in a bowl

  7. Assemble the bowl by placing hummus in the center and surrounding it with the baked potatoes and bean salad
