Vegan Buffalo Chickpea Wraps

Ingredients

Sauce

  • 1/3 cup vegan Buffalo sauce
  • 1 1/2 tbsp tahini or melted vegan butter
  • 2 tbsp unsweetened soy milk
  • 2 tsp nutritional yeast
  • 2 tsp maple syrup

Filling

  • 1 head of cauliflower
  • 1, 15 oz can chickpeas

Wrap

  • Wraps of choice
  • Hummus
  • Greens of choice
  • Sliced avocado

Preparation

  1. Preheat oven to 425°F.

  2. Combine sauce ingredients until smooth.

  3. Dry chickpeas well and place them with cauliflower on a baking sheet.

  4. Pour half the sauce over and toss to coat.

  5. Spread out with flat sides of cauliflower down.

  6. Bake for 15-20 minutes until browned around edges.

  7. Remove from oven and let cool.

Assembly

  1. Spread hummus on a wrap.

  2. Add greens, sliced avocado, and the buffalo chickpea cauliflower mixture.

  3. Optionally, drizzle with extra buffalo sauce.

  4. Wrap up like a burrito or serve with sauce for dipping.

Tips

  1. Store the filling in the refrigerator until ready to assemble the wraps.

  2. This recipe yields approximately 3-4 wraps.
