Vegan Buffalo Chickpea Wraps
Ingredients
Sauce
- 1/3 cup vegan Buffalo sauce
- 1 1/2 tbsp tahini or melted vegan butter
- 2 tbsp unsweetened soy milk
- 2 tsp nutritional yeast
- 2 tsp maple syrup
Filling
- 1 head of cauliflower
- 1, 15 oz can chickpeas
Wrap
- Wraps of choice
- Hummus
- Greens of choice
- Sliced avocado
Preparation
Preheat oven to 425°F.
Combine sauce ingredients until smooth.
Dry chickpeas well and place them with cauliflower on a baking sheet.
Pour half the sauce over and toss to coat.
Spread out with flat sides of cauliflower down.
Bake for 15-20 minutes until browned around edges.
Remove from oven and let cool.
Assembly
Spread hummus on a wrap.
Add greens, sliced avocado, and the buffalo chickpea cauliflower mixture.
Optionally, drizzle with extra buffalo sauce.
Wrap up like a burrito or serve with sauce for dipping.
Tips
Store the filling in the refrigerator until ready to assemble the wraps.
This recipe yields approximately 3-4 wraps.
