Vegan Buffalo Chickpea Wraps

Ingredients

  • Wraps of choice
  • Hummus
  • Greens of choice
  • Sliced avocado

Baked buffalo components

  • 1 head of cauliflower, cut into thumb-sized pieces
  • 1, 15 oz can chickpeas, rinsed and drained and towel dried

Sauce

  • 1/3 cup vegan Buffalo sauce
  • 1 1/2 tbsp tahini or melted vegan butter
  • 2 tbsp unsweetened soy milk
  • 2 tsp nutritional yeast
  • 2 tsp maple syrup

Preparation

  1. Set the oven to 425°F.

  2. Combine the sauce ingredients until smooth.

  3. Ensure the chickpeas are well dried and place them along with the cauliflower on a baking sheet.

  4. Pour half of the sauce over the mixture and toss to coat evenly.

  5. Spread the chickpeas and cauliflower on the pan, with flat sides of cauliflower facing down.

  6. Bake for 15-20 minutes or until the cauliflower browns around the edges.

  7. Remove from the oven and allow to cool.

  8. To assemble the wrap, spread hummus on a wrap of choice.

  9. Add greens, sliced avocado, and the baked buffalo chickpea cauliflower mixture.

  10. Optionally, drizzle with extra buffalo sauce and wrap up like a burrito or serve with sauce as a dip.

Tips

  1. You can store the baked filling until it is time to make the wrap.

  2. This recipe should make 3-4 wraps if divided evenly.
