Vegan Nourish Bowl with Sweet and Sour Chickpeas

Ingredients

Sweet and sour chickpeas

  • 1 tablespoon olive oil
  • 1/2 large red onion
  • 2 cloves garlic
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon tomato paste
  • 1 tablespoon maple syrup
  • 2 tablespoons water
  • 1 tablespoon cornstarch

Nourish bowl components

  • Avocado
  • Rice
  • Zucchini
  • Tomatoes
  • Cucumber
  • Hummus
  • Sesame seeds
  • Chilli flakes

Preparation

Sweet and sour chickpeas

  1. Heat the olive oil in a large pan over medium heat.

  2. Add the onion and garlic and cook for 2-3 minutes until softened.

  3. Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water, and cornstarch.

  4. Cook for around 5 minutes until the sauce thickens.

Nourish bowl assembly

  1. Cook rice according to package instructions.

  2. Chop or slice the avocado, zucchini, tomatoes, and cucumber as desired.

  3. In a bowl, layer the rice and add the sweet and sour chickpeas.

  4. Top with the chopped vegetables, hummus, sesame seeds, and chilli flakes.
