Nourish Bowl with Sweet and Sour Chickpeas
Ingredients
- avocado
- rice
- zucchini
- tomatoes
- cucumber
- hummus
- sesame seeds
- chilli flakes
Sweet and sour chickpeas
- 1 tbsp olive oil
- 1/2 large red onion, diced
- 2 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 1 tbsp tomato paste
- 1 tbsp maple syrup
- 2 tbsp water
- 1 tbsp cornstarch
Preparation
Heat the olive oil in a large pan over a medium heat, then add the onion and garlic
Cook for 2-3 minutes, until softened
Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch
Cook for around 5 minutes, until the sauce thickens
Assembly
Prepare rice according to preferred method
Chop zucchini, tomatoes, and cucumber into bite-sized pieces
Assemble the nourish bowl by combining sweet and sour chickpeas with rice, avocado, chopped vegetables, hummus, sesame seeds, and chilli flakes in a bowl
