Nourish Bowl with Sweet and Sour Chickpeas

Ingredients

  • avocado
  • rice
  • zucchini
  • tomatoes
  • cucumber
  • hummus
  • sesame seeds
  • chilli flakes

Sweet and sour chickpeas

  • 1 tbsp olive oil
  • 1/2 large red onion, diced
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tbsp tomato paste
  • 1 tbsp maple syrup
  • 2 tbsp water
  • 1 tbsp cornstarch

Preparation

  1. Heat the olive oil in a large pan over a medium heat, then add the onion and garlic

  2. Cook for 2-3 minutes, until softened

  3. Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch

  4. Cook for around 5 minutes, until the sauce thickens

Assembly

  1. Prepare rice according to preferred method

  2. Chop zucchini, tomatoes, and cucumber into bite-sized pieces

  3. Assemble the nourish bowl by combining sweet and sour chickpeas with rice, avocado, chopped vegetables, hummus, sesame seeds, and chilli flakes in a bowl
