Sweet and Sour Chickpeas

Ingredients

  • 1 medium red onion, chopped
  • 2 cloves garlic, minced
  • 2 cups oyster mushrooms
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1/4 cup water
  • 1 tbsp cornstarch

Preparation

  1. Sauté the onion and the garlic in a non-stick frying pan for a couple of minutes.

  2. When they soften, add the oyster mushrooms and continue to cook until they soften, which takes around 5 minutes.

  3. Next, add the chickpeas, tamari, rice vinegar, maple syrup, water and cornstarch.

  4. Continue to cook, stirring frequently, for 3-4 minutes more, until the sauce thickens.

Tips

  1. Add any other vegetables of your choice to the chickpeas for variation.

  2. This dish is perfect for a quick and flavorful meal.
