Sweet and Sour Chickpeas and Cauliflower
Ingredients
- 1 medium red onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups cauliflower florets
- 1 can chickpeas, drained and rinsed
Sauce
- 1/3 cup orange juice, freshly squeezed
- 2 tablespoons tamari
- 2 tablespoons rice vinegar
- 1 teaspoon sriracha
- 3 tablespoons water
- 1 tablespoon cornstarch
- 3 tablespoons sesame seeds
Preparation
Sauté the onion and garlic in the olive oil for 2-3 minutes.
Add the cauliflower and cook, stirring frequently, for around 5 minutes.
Add the chickpeas.
Meanwhile, prepare the sauce by stirring together the orange juice, tamari, rice vinegar, sriracha, water, cornstarch and sesame seeds.
Pour the sauce into the frying pan and cook over medium heat for 4-5 minutes more, allowing the sauce to thicken.
