Glazed Chestnut Mushrooms with Tamari Sauce

Ingredients

  • 4 cups chestnut mushrooms
  • 1 tbsp olive oil
  • 1 medium red onion, diced
  • 1 tbsp tomato paste
  • 1/2 cup water
  • 2 tbsp tamari
  • 2 tbsp cornstarch

Preparation

  1. Simmer the mushrooms in a saucepan for 10 minutes, until softened.

  2. Heat the olive oil in a large pan and cook the onion for a few minutes, to soften.

  3. Next, add the tomato paste and cook for 2-3 minutes more.

  4. Drain and rinse the mushrooms and add them to the pan together with the water, tamari and cornstarch.

  5. Stir until the sauce thickens, and serve with either rice or quinoa.
