Sweet and Sour Chickpeas
Ingredients
- 1 tablespoon olive oil
- 1/2 large red onion, diced
- 2 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 2 tablespoons tamari
- 2 tablespoons rice vinegar
- 1 tablespoon tomato paste
- 1 tablespoon maple syrup
- 2 tablespoons water
- 1 tablespoon cornstarch
Preparation
Heat the olive oil in a large pan over medium heat, then add the onion and garlic. Cook for 2-3 minutes until softened.
Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water, and cornstarch. Cook for around 5 minutes until the sauce thickens.
