Quick Sweet and Sour Tofu Stir-Fry
Ingredients
- 1 tbsp olive oil
- 5 oz extra firm tofu, cubed
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp rice vinegar
- 2 tbsp tamari
- 1 1/2 tbsp coconut sugar
- 1/3 cup water
- 1 tbsp cornstarch
Preparation
Heat the olive oil in a large pan.
Then, add the tofu cubes and cook for 7-8 minutes, rotating frequently, until crispy. Remove and set aside.
Add the bell pepper and garlic, cooking for 5-6 minutes, until softened.
Meanwhile, make the sauce by whisking together the tomato paste, rice vinegar, tamari, and coconut sugar.
In a different bowl, whisk together the water and cornstarch.
Add the tofu back to the pan together with the sauce and the cornstarch slurry. Stir for a few minutes until the sauce thickens, then serve.
