Quick Sweet and Sour Tofu Stir-Fry

Ingredients

  • 1 tbsp olive oil
  • 5 oz extra firm tofu, cubed
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp rice vinegar
  • 2 tbsp tamari
  • 1 1/2 tbsp coconut sugar
  • 1/3 cup water
  • 1 tbsp cornstarch

Preparation

  1. Heat the olive oil in a large pan.

  2. Then, add the tofu cubes and cook for 7-8 minutes, rotating frequently, until crispy. Remove and set aside.

  3. Add the bell pepper and garlic, cooking for 5-6 minutes, until softened.

  4. Meanwhile, make the sauce by whisking together the tomato paste, rice vinegar, tamari, and coconut sugar.

  5. In a different bowl, whisk together the water and cornstarch.

  6. Add the tofu back to the pan together with the sauce and the cornstarch slurry. Stir for a few minutes until the sauce thickens, then serve.
