Vegan Sweet and Sour Chickpeas

Ingredients

  • 1 tbsp olive oil
  • 1/2 large red onion, diced
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tbsp tomato paste
  • 1 tbsp maple syrup
  • 2 tbsp water
  • 1 tbsp cornstarch

Preparation

  1. Heat the olive oil in a large pan over medium heat, then add the onion and garlic. Cook for 2-3 minutes until softened.

  2. Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water, and cornstarch.

  3. Cook for around 5 minutes until the sauce thickens.
