Vegan Sweet and Sour Chickpeas
Ingredients
- 1 tbsp olive oil
- 1/2 large red onion, diced
- 2 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 1 tbsp tomato paste
- 1 tbsp maple syrup
- 2 tbsp water
- 1 tbsp cornstarch
Preparation
Heat the olive oil in a large pan over medium heat, then add the onion and garlic. Cook for 2-3 minutes until softened.
Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water, and cornstarch.
Cook for around 5 minutes until the sauce thickens.

This dish can be enjoyed with other proteins or vegetables.
