Vegan Nourish Bowl with Sweet and Sour Chickpeas
Ingredients
- 1 tbsp olive oil
- 1/2 large red onion, diced
- 2 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 1 tbsp tomato paste
- 1 tbsp maple syrup
- 2 tbsp water
- 1 tbsp cornstarch
Bowl components
- avocado
- rice
- zucchini
- tomatoes
- cucumber
- hummus
- sesame seeds
- chilli flakes
Preparation
Heat the olive oil in a large pan over a medium heat, then add the onion and garlic. Cook for 2-3 minutes, until softened.
Add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch. Cook for around 5 minutes, until the sauce thickens.
Assembly
Cook rice according to package instructions.
Chop zucchini, tomatoes, cucumber, and avocado.
In a bowl, layer the cooked rice, sweet and sour chickpeas, chopped vegetables, add hummus, and sprinkle with sesame seeds and chilli flakes.
