Easy Vegan Mediterranean Nourish Bowl

Ingredients

  • 4 cups jasmine rice
  • 1 chopped cucumber
  • 1 cup chopped tomatoes
  • 1/4 red onion, chopped
  • 1/2 avocado
  • 1 can chickpeas
  • 1 cup Brussels sprouts
  • 1 bunch kale, chopped
  • Sea salt
  • Oregano

Dressing

  • Juice from one lemon
  • 3 cloves garlic
  • 3 tablespoons olive oil
  • Sea salt

Preparation

  1. Cook the jasmine rice according to package instructions.

  2. Prepare the dressing by mixing juice from one lemon, minced garlic, olive oil, and sea salt to taste.

  3. In a skillet, sauté the chopped kale, Brussels sprouts, and chickpeas in olive oil and minced garlic until tender.

  4. Add sea salt and oregano to the sautéed mixture and stir well.

  5. In a serving bowl, add the cooked rice.

  6. Add the chopped tomatoes, cucumber, red onion, and avocado.

  7. Top with the sautéed mixture and dressing.
