Easy Vegan Mediterranean Nourish Bowl
Ingredients
- 4 cups jasmine rice
- 1 chopped cucumber
- 1 cup chopped tomatoes
- 1/4 red onion, chopped
- 1/2 avocado
- 1 can chickpeas
- 1 cup Brussels sprouts
- 1 bunch kale, chopped
- Sea salt
- Oregano
Dressing
- Juice from one lemon
- 3 cloves garlic
- 3 tablespoons olive oil
- Sea salt
Preparation
Cook the jasmine rice according to package instructions.
Prepare the dressing by mixing juice from one lemon, minced garlic, olive oil, and sea salt to taste.
In a skillet, sauté the chopped kale, Brussels sprouts, and chickpeas in olive oil and minced garlic until tender.
Add sea salt and oregano to the sautéed mixture and stir well.
In a serving bowl, add the cooked rice.
Add the chopped tomatoes, cucumber, red onion, and avocado.
Top with the sautéed mixture and dressing.
