Easiest Mediterranean Nourish Bowl
Ingredients
- 4 cups jasmine rice
- 1 Chopped cucumber
- 1 cup chopped tomatoes
- 1/4 of a red onion, chopped
- 1/2 avocado
- 1 can of chickpeas
- 1 cup Brussels sprouts
- 1 bunch of kale, chopped
- Juice from one lemon
- 3 cloves of garlic
- 3 tbsp olive oil
- Sea salt
- Oregano
Preparation
Sauté kale, Brussels sprouts, and chickpeas in olive oil and garlic. Season with sea salt and oregano.
Cook jasmine rice according to package instructions and divide it into bowls.
Add chopped tomatoes, cucumbers, and onions to the bowls.
Top with sautéed kale, Brussels sprouts, and chickpeas.
Slice half an avocado and add it to each bowl.
In a separate bowl, whisk together lemon juice, minced garlic, olive oil, and sea salt to make the dressing.
Drizzle the dressing over the nourish bowls.
Serve and enjoy!
