Sesame Miso Lentils
Ingredients
- 1 cup dry small brown lentils
- 2 cups water or vegetable broth
- 3 tbsp tahini
- 1 tsp garlic chili sauce or sriracha
- 1/2 tsp garlic powder
- 1 tsp Dijon mustard
- 1 tsp soy sauce
- 1 tsp maple syrup
- 1 tsp sesame oil
- 1/2 tsp miso paste
- Juice of half a large lemon
- 1/4 cup water
- 1/4 cup red onion, finely diced
- 4-5 sprigs cilantro, roughly chopped
Preparation
Add lentils and vegetable broth to a saucepan and bring to a boil.
Reduce the heat to a simmer and allow the lentils to cook with the lid off for about 15 minutes. Ensure the lentils absorb most of the liquid.
Test the lentils for doneness. If there is excess cooking liquid, drain it off using a colander or strainer. Allow the lentils to cool slightly.
While the lentils are cooking, prepare the dressing. In a medium mixing bowl, combine tahini, chili sauce, garlic powder, soy sauce, mustard, sesame oil, maple syrup, miso, lemon juice, and water. Whisk well to combine, then set aside.
Add the cooked lentils to the bowl with the tahini sauce.
Add the finely diced onions and chopped cilantro to the lentils and sauce mixture.
Mix everything well to combine.
Serve the sesame miso lentils. They can be enjoyed with rice or used as a filling for wraps.
