Ingredients

  • 3 eggs
  • 1 15-ounce can of pumpkin purée
  • 1 cup almond flour
  • 1/3 cup + 1 tbsp coconut flour
  • 2 tbsp pumpkin pie spice
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp vanilla
  • 1 tsp baking powder
  • 3 tbsp nut butter
  • 1/3 cup + 2 tbsp coconut sugar
  • 1/4 cup + 1 tbsp maple syrup

Preparation

  1. Whisk the eggs in a mixing bowl.

  2. Add the pumpkin purée, almond flour, coconut flour, pumpkin pie spice, cinnamon, vanilla, baking powder, nut butter, coconut sugar, and maple syrup to the mixing bowl.

  3. Mix all the ingredients together until well combined.

  4. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with liners.

  5. Fill each muffin liner with the batter, filling about 3/4 of the way.

  6. Bake the muffins in the preheated oven for 40-45 minutes.

  7. Once baked, remove the muffins from the oven and allow them to cool completely before enjoying.
