Flavorful Spinach and Soy Curl Stuffed Wrap
Ingredients
- 1 cup dry soy curls
- 1/2 cup white vinegar
- 2 cups hot water
- 1/2 vegetable bouillon cube or 1 tsp vegetable bouillon base
- 1 tsp cornstarch
- 2 tsp sazon
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 2 tsp soy sauce
- Salt and pepper to taste
- Juice of 1/2 lime
Preparation
In a bowl, add the dry soy curls and pour hot water, vegetable bouillon, and vinegar over them. Allow them to soak for 5-10 minutes.
Drain the liquid using a mesh strainer and gently squeeze out excess liquid from the soy curls.
Transfer the soy curls to another bowl and add cornstarch, sazon, garlic powder, onion powder, paprika, ground cumin, and ground coriander. Toss to coat the soy curls evenly.
Warm a skillet with a teaspoon of oil and add the coated soy curls. Pour in the soy sauce and sauté the curls for 5-10 minutes, or until they release moisture, firm up, and lightly brown.
Just before finishing, squeeze the juice of half a lime over the soy curls and give it a final toss.
Prepare the wrap by stuffing it with spinach, sautéed soy curls, onions, peppers, and pico de Gallo.
Roll up the wrap tightly, securing the fillings inside.
