Savory Plantain Breakfast Bowl

Ingredients

  • 2 green plantains, peeled and quartered
  • 1 tbsp olive oil
  • 1, 15oz can chickpeas, rinsed and drained
  • 1/2 red onion, sliced
  • 2-3 cloves garlic, finely minced
  • 1/2 tsp red pepper flakes
  • 1/2 tsp turmeric
  • 1/2 tsp dry oregano
  • 1 avocado, pitted and sliced
  • Salt and pepper to taste

Preparation

  1. Bring a pot of water to a boil and add salt.

  2. Peel and quarter the plantains, then add them to the boiling water. Boil for 10-15 minutes or until fork tender.

  3. While the plantains boil, prepare the chickpeas. Heat olive oil in a pan and sauté onions with a pinch of salt until softened.

  4. Add minced garlic and red pepper flakes to the pan. Sauté until fragrant.

  5. Incorporate chickpeas, turmeric, and oregano. Sauté occasionally to brown the chickpeas and coat them with spices.

  6. Optionally, when assembling, mash the plantains with 1-2 tablespoons of cooking water and 1-2 tsp oil to prevent dryness.

  7. Arrange the plantains in a bowl or on a plate.

  8. Top with sautéed chickpeas and onions, avocado slices, and any desired extras like hot sauce and cilantro.
