Mediterranean Chickpea and Vegetable Nourish Bowl

Ingredients

  • 4 cups of jasmine rice
  • 1 Chopped cucumber
  • 1 cup of chopped tomatoes
  • 1/4 of a red onion, chopped
  • 1/2 avocado
  • 1 can of chickpeas
  • 1 cup of Brussels sprouts
  • 1 bunch of kale, chopped
  • Juice from one lemon
  • 3 cloves of garlic
  • 3 tbsp of olive oil
  • Sea salt
  • Oregano

Preparation

  1. Heat olive oil in a pan and sauté kale, Brussels sprouts, and chickpeas. Add minced garlic and sauté until the vegetables are slightly crispy. Season with sea salt and oregano.

  2. Cook jasmine rice according to package instructions and divide it between two bowls.

  3. Top the rice with sautéed kale, Brussels sprouts, and chickpeas.

  4. Add chopped tomatoes, cucumber, red onion, and avocado to the bowls.

  5. To make the dressing, whisk together lemon juice, minced garlic, olive oil, and a pinch of sea salt.

  6. Drizzle the dressing over the nourish bowls.

  7. Serve and enjoy!
