Loaded Vegan Buddha Bowl

Ingredients

  • Kale or cabbage mix
  • Sweet potato
  • Chickpeas
  • Avocado
  • Tofu
  • Vegan Greek cheese
  • Tomatoes
  • Cucumber
  • Pumpkin seeds

Tahini dressing

  • Tahini
  • Lime juice
  • Soy sauce
  • Syrup

Preparation

  1. Roast the sweet potato until tender.

  2. Roast the chickpeas until crispy.
