Epic Vegan Chickpea Nuggets
Ingredients
- 2 cans (440g) chickpeas
- 1 onion
- 1/2 cup (50g) oats
- 1 Tbsp nutritional yeast (optional)
- 1 Tsp smoked paprika
- 1 Tsp garlic powder
- 1 Tsp mustard
- salt to taste
Coating
- 1/2 cup (125ml) plant milk
- 3/4 cup (90g) crushed cornflakes
Preparation
Drain and rinse the chickpeas, then mash them with the onion, oats, nutritional yeast, smoked paprika, garlic powder, mustard, and salt to form a mixture.
Shape the mixture into 14 nugget-sized pieces.
Dip each nugget in plant milk and then coat with crushed cornflakes.
Bake at 180°C (360°F) for 15 minutes.

This recipe yields 14 nuggets, each with approximately 90 calories, 4g protein, 13g carbohydrates, and 1g fat.
