Epic Vegan Chickpea Nuggets

Ingredients

  • 2 cans (440g) chickpeas
  • 1 onion
  • 1/2 cup (50g) oats
  • 1 Tbsp nutritional yeast (optional)
  • 1 Tsp smoked paprika
  • 1 Tsp garlic powder
  • 1 Tsp mustard
  • salt to taste

Coating

  • 1/2 cup (125ml) plant milk
  • 3/4 cup (90g) crushed cornflakes

Preparation

  1. Drain and rinse the chickpeas, then mash them with the onion, oats, nutritional yeast, smoked paprika, garlic powder, mustard, and salt to form a mixture.

  2. Shape the mixture into 14 nugget-sized pieces.

  3. Dip each nugget in plant milk and then coat with crushed cornflakes.

  4. Bake at 180°C (360°F) for 15 minutes.

Notes

  1. This recipe yields 14 nuggets, each with approximately 90 calories, 4g protein, 13g carbohydrates, and 1g fat.
