Baked Vegan Chickpea Nuggets

Ingredients

  • 1 can (250g) chickpeas
  • 1/3 cup (30g) oats or flour
  • 2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper
  • 1/4 cup (60ml) plant milk
  • 1/2 cup (60g) crushed cornflakes or breadcrumbs

Optional additions

  • tomato paste
  • mustard
  • other herbs and spices

Preparation

  1. Combine all ingredients in a blender or food processor and blend on low to keep some texture.

  2. Form the mixture into nuggets, then dip them in the plant milk and crushed cornflakes or breadcrumbs.

  3. Lay the nuggets on a baking tray and bake at 180°C for 15-18 minutes.
