Baked Carrot Fries with Chipotle Sauce

Ingredients

  • 3 lbs carrots
  • 1 1/2-2 tbsp neutral high heat oil
  • 3 tbsp arrowroot powder or cornstarch
  • 1 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp pepper

Preparation

  1. Preheat oven to 425 F.

  2. Peel carrots, slice and pat dry with paper towel.

  3. Stir together arrowroot, salt, garlic powder, onion powder, and pepper.

  4. Toss carrot fries with 1 1/2-2 tbsp of oil and spices.

  5. Transfer to parchment paper-lined baking sheet and roast for 20-25 minutes, rotating once or twice while they bake.

  6. Remove from oven, let cool slightly and serve with dipping sauce of choice.

Tips

  1. Spices are optional; the fries are also good with just salt, pepper, and olive oil.

  2. This is a healthier, kid-friendly snack and a great way to add more vegetables to your diet.
