Air-Fried Crispy Carrot and Parsnip Fries

Ingredients

  • 1/2 lb peeled carrots and/or parsnips
  • 1 tsp tapioca flour or cornstarch
  • 1 tsp neutral oil
  • 1 tsp low-sodium soy sauce or tamari
  • 1 tbsp nutritional yeast
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Preparation

  1. Using a sharp knife, slice carrots or parsnips into 3-inch long, 1/2-inch thick fry shapes, optionally using a crinkle cutter for ridges.

  2. At the stovetop, use a medium saucepan with a steaming insert, fill the pan with 1 inch of water, bring to a boil, then reduce to medium heat, add the vegetables, cover, and steam for 4-6 minutes until fork tender, then dry with a kitchen towel.

  3. Place the vegetables in a large mixing bowl and sprinkle with tapioca starch, then shake the bowl vigorously to coat.

  4. In a small mixing bowl, whisk together the oil and soy sauce until emulsified, drizzle over the vegetables, and shake to coat.

  5. Add the remaining ingredients or your favorite spice combination, and shake the bowl one last time to coat evenly.

  6. Place the fries in a preheated air fryer at 400°F, shaking the pan occasionally, until crispy, approximately 10-15 minutes.
