Air-Fried Crispy Carrot and Parsnip Fries

Ingredients

  • 1/2 lb carrots and/or parsnips, peeled
  • 1 tsp tapioca flour or cornstarch
  • 1 tsp neutral oil
  • 1 tsp low salt soy sauce or tamari
  • 1 tbl nutritional yeast
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Preparation

  1. Slice the carrots or parsnips into 3-inch long, 1/2-inch thick fry shapes using a sharp knife, optionally with a crinkle cutter for ridges.

  2. Fill a medium saucepan with 1 inch of water and bring to a boil, then reduce to medium heat. Add the vegetables using a steaming insert, cover, and steam for 4-6 minutes until fork tender, then dry with a kitchen towel.

  3. Place the steamed vegetables in a large mixing bowl and sprinkle with tapioca starch. Shake the bowl vigorously to coat.

  4. In a small mixing bowl, whisk together the oil and soy sauce until emulsified. Drizzle over the vegetables and shake to coat.

  5. Add the remaining ingredients or your favorite spice combo and shake the bowl one last time to coat evenly.

  6. Place the fries in a preheated air fryer at 400°F, shaking the pan occasionally, until crispy, about 10-15 minutes. Enjoy!
