Crispy Air-Fried Carrot and Parsnip Fries
Ingredients
- 1/2 lb carrots and/or parsnips, peeled
- 1 tsp tapioca flour or cornstarch
- 1 tsp neutral oil
- 1 tsp low salt soy sauce or tamari
- 1 tbsp nutritional yeast
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Preparation
Using a sharp knife, slice carrots or parsnips into 3 inches long and 1/2 inch thick fry shape. You can use a crinkle cutter for ridges.
At the stovetop, use a medium saucepan with a steaming insert. Fill pan with 1 inch of water, bring to a boil, then lower to medium heat. Add veggies, cover, and steam for 4-6 minutes until fork tender. Then dry with a kitchen towel.
Place veggies in a large mixing bowl and sprinkle with tapioca starch. Shake the bowl vigorously to coat.
In a small mixing bowl, whisk oil and soy sauce until emulsified. Drizzle on veggies and shake to coat.
Add remaining ingredients or your favorite spice combo. Shake the bowl one last time to coat evenly.
Place fries in a preheated air fryer at 400°F, shaking the pan every so often until crispy, approximately 10-15 minutes. Enjoy.

These fries are perfect as a snack or side dish.
