Vegan Baked Tofu Nuggets
Ingredients
- 6 oz extra firm tofu
- 1/4 cup cornstarch
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp thyme
- 1/4 tsp basil
- 1/4 tsp dill
- 1/4 tsp ground mustard
- 1 tsp liquid smoke
- salt + pepper (to taste)
- 3 1/2 tbsp water
- 3/4 cup brown rice puffs (blended into flour)
- oil (to spray)
Preparation
Press tofu for at least 30 minutes. Optionally, freeze overnight, defrost, and press again.
Preheat the oven to 425 degrees.
Break the tofu into irregular chunks using your hands.
In a medium bowl, combine cornstarch, spices, and water; stir until a paste forms.
Blend rice puffs into a fine flour and pour into a separate bowl.
Dip each tofu chunk in the cornstarch slurry, then in the rice puff flour, back in the slurry, and back in the rice puff flour, ensuring full coating each time. Transfer to a parchment-lined baking tray and repeat for all pieces.
Spray all the tofu chunks with oil.
Bake in the oven at 425 degrees for about 40 minutes, flipping halfway and spraying with more oil if needed.
Remove from the oven and cool briefly.
Serve with dip and enjoy.
