Baked Tofu Kabobs with Peanut Marinade

Ingredients

Marinade

  • 1 onion
  • 2 heaped tablespoons peanut butter
  • 2 tablespoons water
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon ground ginger
  • 1 tablespoon oil
  • 1 tablespoon tomato paste
  • salt to taste
  • juice of 1/2 lemon

Main

  • 400g tofu
  • some agave nectar or maple syrup to drizzle

Preparation

  1. Blend the marinade together.

  2. Tear the tofu into chunks.

  3. Marinate the tofu in the marinade for 1 hour.

  4. Thread the tofu onto skewers.

  5. Bake at 220°C (450°F) for 15-20 minutes, turning occasionally.

  1. Each skewer is approximately 225 calories with 16g protein, 5g carbs, and 15g fat.
