Baked Tofu Kabobs with Peanut Marinade
Ingredients
Marinade
- 1 onion
- 2 heaped tablespoons peanut butter
- 2 tablespoons water
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon chili flakes
- 1/2 teaspoon ground ginger
- 1 tablespoon oil
- 1 tablespoon tomato paste
- salt to taste
- juice of 1/2 lemon
Main
- 400g tofu
- some agave nectar or maple syrup to drizzle
Preparation
Blend the marinade together.
Tear the tofu into chunks.
Marinate the tofu in the marinade for 1 hour.
Thread the tofu onto skewers.
Bake at 220°C (450°F) for 15-20 minutes, turning occasionally.
