Crispy Baked Broccoli with Peanut Sauce
Ingredients
Batter
- 1 cup (125g) flour
- 3/4 cup (180ml) water
- a pinch of salt and pepper
Broccoli and coating
- 1 Broccoli
- 1 cup (100g) breadcrumbs
Sauce
- 1/4 cup (60g) peanut butter
- 1/2 lime
- 1 Tbsp sweetener
- 1 Tbsp tomato paste
- 3/4 Tsp each salt and Chili flakes
- 1 Tsp curry powder
- 4-5 Tbsp water
Preparation
Dip the broccoli into the batter and breadcrumbs
Bake at 180Celsius (360Fahrenheit) for 25-30 minutes
Mix up the sauce
Toss the broccoli in the sauce
Optionally bake for an additional 7-10 minutes
