Crispy Baked Broccoli with Peanut Sauce

Ingredients

Batter

  • 1 cup (125g) flour
  • 3/4 cup (180ml) water
  • a pinch of salt and pepper

Broccoli and coating

  • 1 Broccoli
  • 1 cup (100g) breadcrumbs

Sauce

  • 1/4 cup (60g) peanut butter
  • 1/2 lime
  • 1 Tbsp sweetener
  • 1 Tbsp tomato paste
  • 3/4 Tsp each salt and Chili flakes
  • 1 Tsp curry powder
  • 4-5 Tbsp water

Preparation

  1. Dip the broccoli into the batter and breadcrumbs

  2. Bake at 180Celsius (360Fahrenheit) for 25-30 minutes

  3. Mix up the sauce

  4. Toss the broccoli in the sauce

  5. Optionally bake for an additional 7-10 minutes
