Vegan Crispy Zucchini Fries
Ingredients
Batter
- 1 cup (120g) flour (chickpea flour if gf)
- 7/8 cup (210ml) water
- 1 Tsp each salt, garlic powder, onion powder, dried oregano
- pepper to taste
Zucchini and breadcrumbs
- 1 monster zucchini (or 2-3 medium ones)
- 1 cup (115g) breadcrumbs
Spicy mayo
- 3 Tbsp vegan Mayo (or yogurt)
- 1 Tbsp each sriracha, vinegar and agave
- 1/2 Tsp each garlic and onion powder
Preparation
Cut the zucchini into fries.
Dip in the batter and breadcrumbs.
Bake at 215°C/435°F for 25-30 minutes.
Mix the spicy mayo.
