Vegan Crispy Zucchini Fries

Ingredients

Batter

  • 1 cup (120g) flour (chickpea flour if gf)
  • 7/8 cup (210ml) water
  • 1 Tsp each salt, garlic powder, onion powder, dried oregano
  • pepper to taste

Zucchini and breadcrumbs

  • 1 monster zucchini (or 2-3 medium ones)
  • 1 cup (115g) breadcrumbs

Spicy mayo

  • 3 Tbsp vegan Mayo (or yogurt)
  • 1 Tbsp each sriracha, vinegar and agave
  • 1/2 Tsp each garlic and onion powder

Preparation

  1. Cut the zucchini into fries.

  2. Dip in the batter and breadcrumbs.

  3. Bake at 215°C/435°F for 25-30 minutes.

  4. Mix the spicy mayo.
