Quick Vegan Zucchini Fritters Danish Style

Ingredients

  • 2 tablespoons flax seeds
  • 7 tablespoons water
  • 600 g zucchini
  • 1/2 onion
  • 2 cloves garlic
  • 7 tablespoons oats
  • 7 tablespoons breadcrumbs
  • 1 teaspoon cumin
  • Salt and pepper

Preparation

  1. Mix flax seeds and water and set aside

  2. Wash and shred the zucchini and drain all water

  3. Mix the shredded zucchini with chopped garlic, onion, oats, breadcrumbs, cumin, salt, and pepper

  4. Pour in the flax seeds and mix well

  5. Let the mixture rest in the refrigerator for 10 to 15 minutes

  6. Form the dough into small fritters with your hands

  7. Cook the fritters in rapeseed oil in a pan for 4 to 5 minutes on each side until crispy and golden
