Crispy Vegan Potato Cabbage Nuggets

Ingredients

  • 5 medium potatoes
  • 200g cabbage
  • 1 clove garlic
  • 1 dl (100ml) buckwheat flour
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Flax egg

  • 2 tablespoons flax seeds
  • 5 tablespoons water

Coating

  • Breadcrumbs

Preparation

  1. Mix the flax seeds and water in a small bowl. Let stand for 5 minutes to thicken.

  2. Shred the potatoes and cabbage.

  3. In a large bowl, combine the shredded potatoes, shredded cabbage, garlic, buckwheat flour, the flax seed mixture, paprika, salt, and pepper. Mix well.

  4. Form the mixture into small nugget-shaped pieces.

  5. Roll each nugget in breadcrumbs.

  6. Heat oil in a pan over medium heat.

  7. Add the nuggets to the pan and cook until crispy.
