Crispy Vegan Potato Cabbage Nuggets
Ingredients
- 5 medium potatoes
- 200g cabbage
- 1 clove garlic
- 1 dl (100ml) buckwheat flour
- 1 teaspoon paprika
- Salt and pepper, to taste
Flax egg
- 2 tablespoons flax seeds
- 5 tablespoons water
Coating
- Breadcrumbs
Preparation
Mix the flax seeds and water in a small bowl. Let stand for 5 minutes to thicken.
Shred the potatoes and cabbage.
In a large bowl, combine the shredded potatoes, shredded cabbage, garlic, buckwheat flour, the flax seed mixture, paprika, salt, and pepper. Mix well.
Form the mixture into small nugget-shaped pieces.
Roll each nugget in breadcrumbs.
Heat oil in a pan over medium heat.
Add the nuggets to the pan and cook until crispy.
