Crispy Vegan Potato-Cabbage Nuggets
Ingredients
- 5 medium potatoes
- 200g cabbage
- 1 clove garlic
- 1 dl buckwheat flour
- 2 tablespoons flax seeds and 5 tablespoons water, mixed
- 1 teaspoon paprika
- salt and pepper to taste
- breadcrumbs for coating
- oil for frying
Preparation
Mix 2 tablespoons flax seeds with 5 tablespoons water and let it sit for a few minutes to form a gel.
Shred the cabbage and potatoes.
Mix the shredded vegetables in a bowl with garlic, buckwheat flour, the flax mixture, paprika, salt, and pepper.
Form the mixture into nugget-shaped pieces and roll them in breadcrumbs.
Heat oil in a pan over medium heat.
Add the nuggets to the pan and cook until crispy.
