Crispy Vegan Potato-Cabbage Nuggets

Ingredients

  • 5 medium potatoes
  • 200g cabbage
  • 1 clove garlic
  • 1 dl buckwheat flour
  • 2 tablespoons flax seeds and 5 tablespoons water, mixed
  • 1 teaspoon paprika
  • salt and pepper to taste
  • breadcrumbs for coating
  • oil for frying

Preparation

  1. Mix 2 tablespoons flax seeds with 5 tablespoons water and let it sit for a few minutes to form a gel.

  2. Shred the cabbage and potatoes.

  3. Mix the shredded vegetables in a bowl with garlic, buckwheat flour, the flax mixture, paprika, salt, and pepper.

  4. Form the mixture into nugget-shaped pieces and roll them in breadcrumbs.

  5. Heat oil in a pan over medium heat.

  6. Add the nuggets to the pan and cook until crispy.
