Vegan Fried Zucchini Crisps

Ingredients

  • 2 small zucchinis
  • 1 cup of flour
  • Pinch of salt
  • 1/2 cup of vegetable broth
  • 1/3 cup of water
  • 1 cup bread crumbs
  • 1/3 cup nutritional yeast or parmesan
  • 1 tsp paprika
  • Oil for frying

Sauce

  • 1/2 cup unsweetened soy yogurt
  • 2 tbsp lemon juice
  • 1 tbsp coriander

Preparation

  1. Slice the zucchinis into 1 cm thick slices.

  2. Mix together the flour, salt, broth, and water.

  3. In another bowl, mix the bread crumbs with nutritional yeast and paprika.

  4. Season the zucchinis with salt and pepper, then dip into the flour mixture, coat with bread crumbs, and fry for 3 minutes on each side.

  5. Mix together the soy yogurt, lemon juice, and coriander for the dipping sauce.
