Vegan Broccoli Stalk Fritters
Ingredients
- 1 broccoli stalk, grated
- 1 courgette, grated
- 1 garlic clove, crushed
- 1 tsp paprika, ground coriander, fennel seeds, and oregano
- pinch of chilli flakes
- pinch of salt and pepper
- 1 cup gram flour
- 1/2 cup water
- juice of one lime
- oil for frying
Preparation
Grate the broccoli stalk and courgette into a large mixing bowl.
Add the spices, salt, pepper, flour, water, and lime juice and mix.
Shape into fritters and place into a pan with hot oil until golden on both sides.
Tips
Gram flour is also known as besan or chickpea flour and is commonly used in Indian cuisine.
It can be found in supermarkets' world food section or purchased online.
This recipe is gluten-free.
Plain white flour may work as a substitute, though it has not been tested.
The courgette can be swapped with a large grated carrot.
The fritters can be baked in the oven instead of fried, though it has not been tested.
