Broccoli and Zucchini Fritters

Ingredients

  • 1 broccoli stalk, grated
  • 1 courgette (zucchini), grated
  • 1 garlic clove, crushed
  • 1 tsp paprika + ground coriander + fennel seeds + oregano
  • pinch chilli flakes
  • pinch salt & pepper
  • 1 cup gram flour (chickpea flour)
  • 1/2 cup water
  • juice of lime
  • oil for frying

Preparation

  1. Grate the broccoli stalk and courgette into a large mixing bowl.

  2. Add spices, salt and pepper, flour, water, and lime juice, and mix.

  3. Shape into fritters and place into a pan with hot oil until golden on either side.

Serving suggestions

  1. Serve with fresh coriander, a squeeze of lime, and optionally guacamole.
