Salt and Vinegar Smashed Potatoes

Ingredients

Fingerling potatoes

  • ~1 lb fingerlings (can sub other small potato)
  • 2 cups vinegar
  • 3 cups water
  • about 1 tsp salt (for boiling)
  • salt and pepper to taste

Yogurt sauce

  • 1/4 cup vegan yogurt
  • 2 tbsp olive oil
  • 1 clove garlic – minced
  • juice from 1/2 lemon
  • salt and pepper to taste

Optional garnishes

  • chives or parsley

Preparation

  1. Add vinegar and water to a pot and bring to a boil. Add potatoes and about 1 tsp of salt. Boil for 15 minutes or until potatoes are soft.

  2. Preheat oven to 425 degrees.

  3. Add boiled fingerlings to a lined sheet pan. Smash each potato with the bottom of a jar. Lightly drizzle with olive oil and season with salt and pepper. Roast for 30 minutes.

  4. While potatoes are cooking, make the yogurt sauce by mixing together all sauce ingredients.

  5. Drizzle sauce over the fingerlings or use for dipping. Add garnish if desired.

Notes

  1. This is a healthier alternative to salt and vinegar chips.
