Vegan Tzatziki Greek Dip
Ingredients
- 1 cucumber
- 2 cloves minced garlic
- 400g vegan yogurt
- 2 Tbsp chopped mint
- 2 Tbsp chopped parsley
- juice of 1/2 lemon
- salt to taste
- pepper to taste
- a drizzle of olive oil
Preparation
Grate the cucumber and squeeze out all the water.
Combine the minced garlic, vegan yogurt, chopped mint, chopped parsley, lemon juice, salt, pepper, and olive oil in a bowl.
Add the prepared cucumber to the mixture and stir well.
Serve the dip.
