Baked Smashed Potatoes with Lemon and Tahini
Ingredients
- 1 pound baby yukon gold or red potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 tsp garlic powder
- 1 lemon
- 2-3 tbsp sesame tahini
- fresh herbs to your liking
- 1/2 chopped red onion
Preparation
Boil potatoes for 15 minutes then drain well.
Toss with oil, salt and garlic powder.
Put on a sheet pan and bake at 420 degrees for 20 minutes, flip halfway, then smash with the back of a spoon and bake for 10 more minutes for ultimate crispiness.
Drizzle with tahini, squeeze a lemon, sprinkle with herbs and onion, and serve.
Tips
These potatoes are great as leftovers. Chop them up, add vegan mayo and more herbs to make a flavorful chilled potato salad, perfect for a picnic.
