Baked Smashed Potatoes with Lemon and Tahini

Ingredients

  • 1 pound baby yukon gold or red potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 lemon
  • 2-3 tbsp sesame tahini
  • fresh herbs to your liking
  • 1/2 chopped red onion

Preparation

  1. Boil potatoes for 15 minutes then drain well.

  2. Toss with oil, salt and garlic powder.

  3. Put on a sheet pan and bake at 420 degrees for 20 minutes, flip halfway, then smash with the back of a spoon and bake for 10 more minutes for ultimate crispiness.

  4. Drizzle with tahini, squeeze a lemon, sprinkle with herbs and onion, and serve.

Tips

  1. These potatoes are great as leftovers. Chop them up, add vegan mayo and more herbs to make a flavorful chilled potato salad, perfect for a picnic.
