Easy Vegan Buffalo Chickpea Salad
Ingredients
Buffalo chickpeas
- 1 15 ounce can chickpeas
- 1 tablespoon olive oil
- 1/4 cup hot sauce
- 1 tablespoon melted vegan butter
- Salt
- 1 teaspoon garlic powder
Salad additions
- Chopped red onion
- Tomatoes
- Avocado
- Cauliflower rice
Preparation
Rinse the chickpeas and pat dry
Add the chickpeas to a bowl
Add 1 tablespoon olive oil to the chickpeas and sprinkle with a little salt
Mix together
Line a pan with parchment paper
Add the chickpeas and spread them out
Bake at 425°F for 15 minutes
In a small bowl, mix together the hot sauce, melted vegan butter, salt, and garlic powder
Pour the sauce over the chickpeas after baking
Bake for an additional 5-7 minutes
Remove from the oven
Salad assembly
Combine chopped red onion, tomatoes, avocado, and cauliflower rice in a bowl
Add the prepared buffalo chickpeas on top
Drizzle with your choice of dressing and serve
Tips
This dish is ideal for meatless meals and can be customized with various vegetables
Buffalo chickpeas can also be used in tacos or quesadillas
