Easy Vegan Buffalo Chickpea Salad

Ingredients

Buffalo chickpeas

  • 1 15 ounce can chickpeas
  • 1 tablespoon olive oil
  • 1/4 cup hot sauce
  • 1 tablespoon melted vegan butter
  • Salt
  • 1 teaspoon garlic powder

Salad additions

  • Chopped red onion
  • Tomatoes
  • Avocado
  • Cauliflower rice

Preparation

  1. Rinse the chickpeas and pat dry

  2. Add the chickpeas to a bowl

  3. Add 1 tablespoon olive oil to the chickpeas and sprinkle with a little salt

  4. Mix together

  5. Line a pan with parchment paper

  6. Add the chickpeas and spread them out

  7. Bake at 425°F for 15 minutes

  8. In a small bowl, mix together the hot sauce, melted vegan butter, salt, and garlic powder

  9. Pour the sauce over the chickpeas after baking

  10. Bake for an additional 5-7 minutes

  11. Remove from the oven

Salad assembly

  1. Combine chopped red onion, tomatoes, avocado, and cauliflower rice in a bowl

  2. Add the prepared buffalo chickpeas on top

  3. Drizzle with your choice of dressing and serve
