Vegan Buffalo Chickpea Roll-Ups
Ingredients
- 1 14.5 ounce can chickpeas
- 1/3 cup shredded carrots
- 1/4 cup diced red onion
- 1/4 cup cilantro
- 1/3 cup hot sauce
- 1 tsp garlic powder
- 1/2 tsp salt
- 4 gluten free tortillas
- 2 mashed avocados
- Handful of spinach
- 1/2 cup vegan cream cheese
Preparation
Wash and drain the chickpeas then mash.
Add to a bowl with the other chickpea ingredients.
Stir together.
Lay the wrap out, add cream cheese to the entire wrap so it will fold together well.
Fill 2/3 with avocado, chickpea mix, and spinach.
Roll together.
Slice and enjoy.
Notes
Makes 4 servings and can be stored in the fridge for up to 5 days.
