Vegan Buffalo Chickpea Roll-Ups

Ingredients

  • 1 14.5 ounce can chickpeas
  • 1/3 cup shredded carrots
  • 1/4 cup diced red onion
  • 1/4 cup cilantro
  • 1/3 cup hot sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 4 gluten free tortillas
  • 2 mashed avocados
  • Handful of spinach
  • 1/2 cup vegan cream cheese

Preparation

  1. Wash and drain the chickpeas then mash.

  2. Add to a bowl with the other chickpea ingredients.

  3. Stir together.

  4. Lay the wrap out, add cream cheese to the entire wrap so it will fold together well.

  5. Fill 2/3 with avocado, chickpea mix, and spinach.

  6. Roll together.

  7. Slice and enjoy.

Notes

  1. Makes 4 servings and can be stored in the fridge for up to 5 days.
