Easy Curry Chickpea Sandwich
Ingredients
- 1 red onion, chopped
- 2 garlic cloves, chopped
- 1 can (220g) chickpeas
- 1/4 cup (60g) tahini
- 1 tablespoon sriracha
- 1 teaspoon curry and paprika
- salt to taste
- 1/2 lemon
- 1 tablespoon agave or maple syrup
Optional additions
- parsley or cilantro
Preparation
Slightly mash the chickpeas.
Mix everything together to combine and optionally add some parsley or cilantro.
Build the sandwich with whatever you want.

This filling is perfect for meal prep and pairs well with homemade bagels or other breads.
