Chickpea Ranch Salad Sandwich
Ingredients
- 1 can chickpeas, rinsed and drained
- 1/2 red bell pepper, finely diced
- 1/4 cup red onion, finely diced
- Bread of your choice
Tahini ranch
- 3 tbsp tahini
- 3 tbsp plain unsweetened plant-based yogurt
- Juice of half a lemon
- 2 tsp brown mustard
- 1/2 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 2 tsp dry parsley
- 2-3 sprigs fresh dill, minced
- Salt and pepper to taste
- 3-4 tbsp water
Preparation
Tahini ranch
Combine all Tahini Ranch ingredients in a bowl and whisk until smooth
Sandwich
In a bowl, add the chickpeas and mash to desired consistency using a fork or potato masher
Add the Tahini Ranch, bell pepper, and onion, and mix well to combine
Scoop the chickpea mixture between two slices of bread and serve as desired
Tips
Feel free to add extra dressings or toppings as desired
