Chickpea Ranch Salad Sandwich

Ingredients

Tahini ranch

  • 3 tbsp tahini (I used @soomfoods)
  • 3 tbsp plain unsweetened plant based yogurt
  • Juice of half a lemon
  • 2 tsp brown mustard
  • 1/2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp dry parsley
  • 2-3 sprigs fresh dill, minced
  • Salt and pepper to taste
  • 3-4 tbsp water

Sandwich

  • 1 can chickpeas, rinsed and drained
  • 1/2 red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • Bread of your choice (I used @silverhillsbakery)

Preparation

  1. Whisk together all tahini ranch ingredients in a small bowl until smooth.

  2. In a bowl, mash the chickpeas with a fork or potato masher to your desired consistency.

  3. Add the tahini ranch, diced bell pepper, and diced onion to the mashed chickpeas and mix well to combine.

  4. Scoop the mixture between two slices of bread to make a sandwich and add additional dressings as desired.

Tips

  1. This recipe also works well with a wrap instead of bread.
