Chickpea Ranch Salad Sandwich

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/2 red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • Bread of your choice

Tahini ranch

  • 3 tbsp tahini
  • 3 tbsp plain unsweetened plant based yogurt
  • Juice of half a lemon
  • 2 tsp brown mustard
  • 1/2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp dry parsley
  • 2-3 sprigs fresh dill, minced
  • Salt and pepper to taste
  • 3-4 tbsp water

Preparation

  1. Prepare the Tahini Ranch by combining all its ingredients in a bowl and mixing until smooth.

  2. In a bowl, mash the chickpeas to your desired consistency using a fork or potato masher.

  3. Add the prepared Tahini Ranch, diced red bell pepper, and diced red onion to the mashed chickpeas and mix well to combine.

  4. Scoop the mixture between two slices of bread to assemble the sandwich.

Tips

  1. Adjust the chickpea mash consistency as preferred, such as a 50-50 mix of crushed and whole chickpeas.

  2. This sandwich mixture also works well in a wrap instead of bread.
