Vegan Chickpea Salad Sandwich

Ingredients

  • 1 (15 ounce) can of chickpeas or garbanzo beans, drained, rinsed, and skins removed
  • 1/4 cup of vegan mayo
  • 1 Tbsp dijon mustard
  • 1/2 tsp turmeric powder
  • 1 tsp garlic powder
  • 1 Tbsp fresh dill, chopped finely
  • 1 Tbsp green onion, chopped
  • 1 Tbsp dill pickle, finely diced, add more for a tangy salad
  • 1/2 tsp pepper
  • 1/2 tsp salt

Preparation

  1. Drain and rinse the chickpeas, and remove their skins

  2. Mash the chickpeas in a bowl

  3. Add vegan mayo, dijon mustard, turmeric powder, garlic powder, chopped fresh dill, chopped green onion, finely diced dill pickle, pepper, and salt, then mix until well combined

  4. Spread the mixture on bread to make a sandwich or serve with crackers

Tips

  1. For a gluten-free version, use gluten-free bread or crackers
