Apple Chickpea Vegan Salad

Ingredients

  • 1 chopped apple
  • 1 can rinsed and smashed chickpeas
  • 1 bunch chopped green onions
  • Handful of dried cranberries
  • 1/2 teaspoon garlic powder
  • Spinach for garnish
  • Shredded carrots for garnish
  • Spinach tortillas

Dressing

  • 1 teaspoon Dijon mustard
  • 2 teaspoons maple syrup
  • 3 tablespoons tahini
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste

Preparation

  1. Rinse and smash the chickpeas.

  2. Chop the apple and green onions.

  3. In a small bowl, whisk together the dressing ingredients until smooth, adding water if needed to adjust consistency.

  4. Layer spinach and shredded carrots as the base in a serving bowl.

  5. Add the smashed chickpeas, chopped apple, green onions, and dried cranberries.

  6. Drizzle with the dressing and toss gently to combine.

  7. Serve as a salad or wrapped in spinach tortillas.
