Apple Chickpea Vegan Salad
Ingredients
- 1 chopped apple
- 1 can rinsed and smashed chickpeas
- 1 bunch chopped green onions
- Handful of dried cranberries
- 1/2 teaspoon garlic powder
- Spinach for garnish
- Shredded carrots for garnish
- Spinach tortillas
Dressing
- 1 teaspoon Dijon mustard
- 2 teaspoons maple syrup
- 3 tablespoons tahini
- 1 teaspoon apple cider vinegar
- Salt and pepper to taste
Preparation
Rinse and smash the chickpeas.
Chop the apple and green onions.
In a small bowl, whisk together the dressing ingredients until smooth, adding water if needed to adjust consistency.
Layer spinach and shredded carrots as the base in a serving bowl.
Add the smashed chickpeas, chopped apple, green onions, and dried cranberries.
Drizzle with the dressing and toss gently to combine.
Serve as a salad or wrapped in spinach tortillas.
