Chickpea Broccoli Slaw Salad
Ingredients
- 1 can chickpeas, drained and rinsed
- 2 cups broccoli slaw
- 3 tbsp tahini
- Juice of 1 lemon
- 1/2 tsp garlic powder
- 1/2 tsp salt
- Pinch of red pepper
- Water to thin
- Trader Joe’s Vegan chicken-less seasoning, to taste
- Red pepper flakes, to taste
- Chopped fresh parsley
Preparation
Add chickpeas and slaw to a large bowl and mix.
Whisk tahini, lemon juice, garlic powder, salt, and red pepper together. Add a touch of water to thin.
Add the dressing to the bowl and mix everything together.
Add chicken-less seasoning to taste, along with any other favorite seasonings and additional red pepper flakes if desired.
Top with chopped parsley and serve.
Notes
This salad takes less than 10 minutes to make and is loaded with veggies, protein, and healthy fats for a quick plant-based lunch or dinner.
