Broccoli Slaw Chickpea Rice with Lemon Tahini Dressing
Ingredients
- 3 cups (600 g) cooked rice
- 2 1/2 cups (212 g) broccoli slaw
- 1 (16 oz) can chickpeas
- 1/2 cup (17 g) cilantro
- Squeeze of lemon
- Salt and pepper to taste
Lemon tahini dressing
- 2 Tbsp (30 g) tahini
- Juice from 1 lemon
- 3 Tbsp (45 ml) olive oil
- 1 tsp (5 ml) vegan honey or maple syrup
- 2-3 Tbsp (30-45 ml) water
- Salt and pepper to taste
Preparation
Make the dressing by combining all of the ingredients and set aside.
Roughly chop the broccoli slaw and add it to a large bowl with the cooked rice, rinsed chickpeas, and chopped cilantro.
Season the mixture with salt, pepper, and a squeeze of lemon.
Pour in one-third to one-half of the dressing, mix well, and serve the remainder alongside.
