Broccoli Slaw Chickpea Rice with Lemon Tahini Dressing

Ingredients

  • 3 cups (600 g) cooked rice
  • 2 1/2 cups (212 g) broccoli slaw
  • 1 (16 oz) can chickpeas
  • 1/2 cup (17 g) cilantro
  • Squeeze of lemon
  • Salt and pepper to taste

Lemon tahini dressing

  • 2 Tbsp (30 g) tahini
  • Juice from 1 lemon
  • 3 Tbsp (45 ml) olive oil
  • 1 tsp (5 ml) vegan honey or maple syrup
  • 2-3 Tbsp (30-45 ml) water
  • Salt and pepper to taste

Preparation

  1. Make the dressing by combining all of the ingredients and set aside.

  2. Roughly chop the broccoli slaw and add it to a large bowl with the cooked rice, rinsed chickpeas, and chopped cilantro.

  3. Season the mixture with salt, pepper, and a squeeze of lemon.

  4. Pour in one-third to one-half of the dressing, mix well, and serve the remainder alongside.
